Egyptian molokhia: our signature crop
How Montana became one of the first companies in the world to produce frozen molokhia — and what it takes to do it right.
Molokhia is to Egypt what miso is to Japan or olive oil to Italy — a household staple that defines a cuisine. Montana was among the first companies in the world to industrialize its production as a frozen product, and four decades later we remain the recognized name for it across the Egyptian diaspora.
The difficulty with molokhia is the speed: the leaves wilt fast. A bunch picked at 6 AM has lost most of its character by 6 PM. Montana's solution is geographic — our fields and our factory share a postcode. Harvested leaves arrive at the production line in less than 30 minutes. They are washed, refinery-pulled, and cut by purpose-built machinery within the hour. The result is a frozen product that retains the original color, aroma, and the slight bitterness that Egyptians recognize as the real thing.
The product ships in two forms — whole leaves and chopped — in retail 400 g bags (20 per carton) and 2.5 kg food-service bags (4 per carton). Peak season is July through October; off-season demand is met from cold storage at our Maamoun facility.
For export buyers: molokhia is mostly purchased by Arab-diaspora markets (Gulf, UK, France, USA, Canada, Australia). Our distributors in those countries report it as one of their highest-velocity SKUs during Ramadan and for traditional family meals year-round.
