Okra: the small pods Egypt cooks by the millions
Graded small for the most tender bite and frozen whole at harvest — okra the way an Egyptian *bamia* is meant to be.
In an Egyptian kitchen, okra — bamia — is judged by size. The smaller and younger the pod, the more tender it is and the less it turns gluey in the pot. Big okra is cheap; small okra is what a good cook wants.
Montana grades for exactly that. Our okra is selected from the finest seeds, harvested young, sorted to size, and frozen whole within hours so the pods keep their firmness and bright green colour. The small grade in particular is prized across our export markets for stews and the classic tomato-and-garlic bamia.
Freezing also means no seasonal gap: fresh okra is a summer crop, but a Montana bag delivers the same tender, well-graded pods in December as in July — which is why it travels so well to diaspora kitchens far from an Egyptian market.
